It was a rainy evening when my husband phoned to tell me that his friend had just called him; his friend’s wife and their children were in our area and were coming over to our place- in a couple of hours! I glanced at the clock, it was 5PM, which meant that by the time the guests would arrive, it would be dinner time! I didn’t panic though, because I knew that I had made enough tandoori chicken for dinner, and that there would be plenty of leftovers to serve the guests.

At that moment, I was so glad that I was “that” mom that always made leftovers for the next day, especially every time I made tandoori chicken. Tandoori chicken is a family favourite in our home, it’s a dish that we make almost every week. There are so many ways to make tandoori chicken, but the easiest way to make it is by using Shan Tandoori Masala mix.

Here’s how I make tandoori chicken using the Shan Tandoori Masala mix:

  • 8-12 pieces of chicken legs
  • 1 cup of plain yogurt
  • 5 tablespoons of lemon juice
  • 2 tablespoons of cooking oil
  • 1 package of Shan Tandoori Masala Mix

  1. Mix all of the ingredients together and marinate the chicken for at least 1 hour.
  2. Arrange chicken in a baking pan and bake at 350°F for 30 minutes or until tender.
  3. Turn the oven setting to broil and broil chicken until lightly brown. Serve with rice or naan!

An hour had passed since my husband had called me, when the phone rang again; it was my husband. He called to ask me how the food preparations were going, that’s when I told him that I had just finished cooking the rice and making the salad, and all that needed to be done was to heat the tandoori chicken once the guests would arrive. “Tandoori chicken?” asked my husband…”yeah, why?” I replied. After 3 seconds of silence, my husband responded with, “oops, I forgot to tell you that they’re vegetarian…” NOW, I was panicking!

I quickly hung up the phone and dashed into my pantry; I frantically looked around and that’s when I saw the pot of, or should I say, the can of, GOLD! CHICKPEAS! Good ole chickpeas! I grabbed the can of chickpeas, a package of Shan Chana Masala and went to work!

I’m happy to announce that I was able to cook the chickpeas before the guests arrived and that they loved the dish!

Here’s how I made the dish:

  • 1 can of chickpeas, drained
  • 1 onion, finely diced
  • 1 medium sized tomato, finely diced
  • 1 tablespoon of Shan Garlic and Ginger Paste
  • 2 tablespoons of cooking oil
  • 3 tablespoons of Shan Chana Masala Mix
  • Cilantro for garnish (optional)

  1. Heat cooking oil in a pan and add onion.
  2. Once onion is slightly brown, add the ginger and garlic paste. Cook for 1 minute, then add the tomato.
  3. Add in the Shan Chana Masala Mix and mix everything together until the tomato softens.
  4. Put in the chickpeas and cook for about 10 minutes and garnish with cilantro (optional)!

Thank goodness for chickpeas, they really did save the day!
